A perfect way to begin the day with freshly made waffles or enjoy them with the kids after school. This recipe ensures you get light, crispy waffles every time. Prepared in under 20 mins and very easy to cook, as the waffle iron does all the hard work. Waffle irons can be purchased from most big retail chains or kitchen stores. Serve your waffles with ice-cream, chocolate sauce, maple syrup, fresh fruit or cream, the list goes on. The ingenious design of a waffle is the deep ridges, making it perfect for capturing any toppings you add, ensuring that every mouthful is a good as the one before.

Ingredients
- 1 3/4 cup plain flour
- 2 tsps baking powder
- 1/2 tsp salt
- 1 tbsp sugar
- 3 eggs, separated
- 1 1/2 cups milk
- 90g butter, melted

- In a large bowl, sift the flour and baking powder. Add the salt and sugar. Combine slightly with a stainless steel spoon.
- In a separate bowl beat together the egg yolks and milk. Gradually add the melted butter while beating. Beat for 5 mins.
- Make a well in the centre of the flour mixture, pour in the egg yolk mixture and combine with just a few stirs. You want the batter to stay quite lumpy. Do not mix until smooth.
- Beat the egg whites in another bowl until stiff peaks form and fold into the batter until just combined.
- Lightly butter your waffle iron and begin cooking them as per the instructions given for your waffle iron. Buttering your iron once should be fine as it seals the iron for the next waffle.
- Serve immediately for a crispy waffle or cover with a cloth until you are finished cooking. They will soften with the heat but still taste just as good.
Hints!
- Add 1tsp vanilla extract or essence for added flavour.
- For gluten-free waffles substitute the flour for gluten-free plain flour.
